Cherry Stout – All Grain

Cherry Stout is a classic dry stout, jet black with a tan head and the espresso-like bitterness of roasted grain. But it’s also laced with natural cherry extract, which cuts through the burnt-coffee character and adds a subtle fruit flavor and aroma.

5 gallon yield, all grain recipe
Ingredients:
10 lbs 2-row
1 lb Munich 10L
1 lb Caramel 60L
1 lb Carapils®
3oz Roasted Barley
5oz Black Patent
8oz Chocolate Malt
3oz German Hallertauer Hops AA 3.5% (1@ firstwort, 1@ 60 minutes, 1@ 30 minutes)
1 Quart Montmorency Cherry Juice Concentrate (to make two gallons)
Altbier yeast (WLP036)

Instructions:

Heat 4 ½ Gallons strike water to 172°F, mash in and settle out at 158°F. Rest 60 minutes. Vorlauf until clarified and sparge w/ 5 ½ gallons water at 172°F collecting 6 gallons of wort. Bring to a boil, and boil for approx. 75 minutes, adding hops at appropriate intervals. Cool to approx 70°F, and then strain into a 6 ½ gallon carboy, adding cherry concentrate and yeast. Attach blow-off tube and ferment at 62°F.
