Cherry Vanilla Soda is a light reddish amber with a lasting creamy white head with good lacing. Aromas of cherry, vanilla, marshmallow creme and a hint of carmel. Palate was light to medium bodied and smooth. Flavors of vanilla, marshmallow, light cherry and light carmel with a smooth sweet finish.
5 gallon recipe
1 quart Montmorency Cherry Juice Concentrate
6 cups unrefined cane sugar
2 whole Vanilla beans, chopped into ½ inch pieces
5 gallons water
Instructions if kegging:
Bring five gallons water to a boil, turn off the heat, and steep the vanilla beans for 15 minutes. Stir in the cherry juice concentrate and the sugar until completely dissolved. Turn the heat back on until the mixture is almost at a boil, then immediately pour it into a Cornelius keg. Close the lid and apply 50 psi of CO2 pressure to the head space. Turn the keg upside down for at least two minutes, then turn it back over and allow it to cool down overnight. On the following day chill the keg, force carbonate it to around 2.8 volumes, and enjoy!
