O’Pirate Stout Clone pours dark brown with a creamy light tan head. Aroma has notes of roasted malt, chocolate, oatmeal and coffee. Taste is medium sweet and light bitter with a roasted finish. Body is medium, texture is oily, carbonation is soft.

5.35 lbs. Pale LME
12oz. Chocolate Malt, milled for steeping
12oz. Roasted Barley, milled for steeping
8oz. Flaked Oats
.5 oz. Columbus hops @ 13.4%AA, for bittering 60 minutes
.5 oz. Cascade hops @ 7.7%AA, 15 minutes
1 oz. Cascade hops 0 minutes
California Ale Yeast (WLP001)
Bring two gallons of water to 160°F, turn off the heat and steep the milled grains and flaked oats for 15 minutes. Remove the grains and discard. Bring the grain tea to a boil, turn off the heat, and stir in the malt extracts until completely dissolved. Return to a boil and add the bittering hops and set a timer for 60 minutes, when there is 15 minutes left add half ounce of cascade hops. At the end of the boil turn off heat and stir in one ounce cascade hops. Cool below 80°F, top up to 5 gallons with bottled cool water, and pitch the yeast. Ferment at 68 to 73°F for up to two weeks before bottling. Prime with ¾ cup corn sugar if bottling.
