Sage Wit

Sage Wit is a Belgian Wit spiced with sage and coriander, amplifying the aromatics of the belgian yeast. This light bodied wheat beer is a great summer brew!

8 lbs Wheat Malt Extract

½ lb. Vienna malt

½ lb. Carapils

½ lb. Maris Otter

½ lb. White Wheat malt

1 oz. Saaz

1 oz. Bitter Orange Peel

 

Bring water to 160F degrees and steep grains for half an hour, then discard the grains and bring the tea to a boil. Stir in:

 

Wheat Malt Extract (8 lbs. total)

1 pint orange juice

 

Bring back to a boil, set a timer for 60 minutes, and add:

 

1 oz. Saaz hops

 

When there are 30 minutes remaining, add:

 

1 oz. Bitter orange peel

 

When there are 5 minutes remaining, add:

 

½ oz. crushed coriander seed

one loose handful of white sage leaves, ground into a powder

 

After the boil, cool the wort to 80 degrees or less, strain it into a 6.5 gallon carboy, top up with bottled water to just over five gallons, and pitch:

 

1 vial Belgian Wit Yeast (White Labs # WLP400)

 

Ferment at roughly 70 degrees for seven to ten days until fermentation is complete, then rack the beer into a keg, carbonate, and enjoy!
