Troy’s Epic Piney Ale (not Pliney)

Troy’s Epic Piney Ale (not Pliney) pours clear gold with a dense creamy white foam head. Smells bready and doughy with loads of bright tropical fruit and citrusy notes of passionfruit, guava, mango, peach, papaya, grapefruit, orange peel, with floral earthy herbal grass and dank resinous pine. Tastes like passionfruit, guava, mango, peach, papaya, grapefruit, orange peel, some bready malts, with bitter floral earthy herbal grass and dank resinous pine. Feels medium bodied, creamy and smooth with moderate low carbonation.

5 gallons extract

 

7 lbs LME

1 lb. Dark Candi Sugar

8 oz. 10L Carmel Malt

8 oz. Carapils Malt

4 oz. Special B Malt

1 oz Simcoe (bittering @ 60 min.)

1 oz. Simcoe @ 20 min.

1 oz. Simcoe @ 5 min.

1 oz. Simcoe @ 0 min.

 

WLP007 Dry English Ale yeast

 

Instructions:

 

Heat 2-3 gallons of water. Put the Malt a nylon steeping bag, and when the water reaches 170° F turn off heat and steep for 15 minutes. Remove the grain bag and turn the heat back on. When the water comes to a boil, turn off the heat and stir in the sugars (malt extract and candi sugar) until completely dissolved. Turn heat back on. When the wort comes to a boil, set a timer for 60 minutes and add the bittering hops. When there are 20 minutes remaining on the timer add the second ounce of Simcoe hops. When there are 15 min. remaining add the reconstituted Irish Moss. With 5 min. left on the boil add the third ounce of Simcoe hops, and the last ounce just before turning off the heat. After boiling, cool wort and top up with cold water to just over 5 gallons. Cool to 80 degrees or less before adding yeast. Aerate well and ferment at 72 degrees for one week. Allow to ferment at least one more week (and not more than two) before bottling. Prime with ¾ cup corn sugar at bottling time.
